Whole30 Challenge - Day 11 and Meat Loaf Recipe

One of the biggest things I am missing during this Whole30 is my protein shake. Go figure, right? Since I haven't been having it before or after my workouts, I don't feel as strong during my workouts and my muscles definitely aren't recovering as well. I feel tired and achy afterwards, instead of energized and stronger. I am not sure if I am just not getting the right meals before and after my workouts, but it is a lot of work to cook a huge meal before and after my workouts, especially with my three kids who also need to eat. I have been having some nuts and veggies before working out and three eggs with ghee, a banana with Sunbutter and a bunch of veggies afterward. I would think that would be enough...

Anyways, I can't wait to get back to my regular workouts and shakes. But, otherwise I am feeling good about where I am today.

I have another fabulous recipe to share with you today.

Meat Loaf - gluten free, Paleo version

3 lbs. ground beef (I used 2 lbs of ground beef, one lb of ground bison)
2 zucchini
1 red onion
4-6 small mushrooms
8 cloves of garlic
1 tbsp. Italian seasoning
salt and pepper

First, grate your zucchinis into a large bowl.

Then, grind up your onion, garlic, and mushrooms in your food processor.

Add them to the large bowl with the zucchini. Then, add everything else in and mix with your fingers until well mixed.

Form it into a log and put it on a baking sheet.

Flatten it slightly and cook for about 50 minutes on 375 degrees (F). Then, I cut it into slices and served it with sweet potato fries, my personal fave.


This meat loaf is so tasty, you will not even need to use ketchup or any other dipping sauce. It also makes your house smell like a restaurant. Your taste buds will be watering, and they will not be disappointed!

  1. Sounds yummy. We love meatloaf. This is quite a variation for me since it has no tomato in it. We like all the ingredients, so I'll give it a try.

  2. Meatloaf with zucchini!!! Yum!!! I luv it! I typically use so much bread that it could be called stuffing but I can't wait to try this!!!!

  3. Making this tonight!!!! My husband wanted to wrap it in nitrate free bacon, would that be ok if we are on the 30 day challenge?? ;)

    1. You can use bacon if it doesn't have any sugar. Good luck! I couldn't find any around me...
