So, I have been doing what all slightly depressed, freezing cold people do. Eat.
My food of choice when I want a little comfort is sweets. And my favorite sweets are these amazing chocolate, melt-in-your-mouth, no-bake cookies that are even, dare I say, a bit healthy for you! Seriously... raw honey, coconut flakes, walnuts, coconut oil, cinnamon - those are all super healthy for you!
I could go on and on about these cookies. But, let me just say 2 more things:
- These are so easy my husband makes them. And no baking is required (which is maybe why my husband is able to make them by himself. Joking, honey, just joking).
- They are so delicious I eat them every day. No joke.
The BEST Chocolate Melt-In-Your-Mouth, No-Bake Cookies
Ingredients:
1 cup dark chocolate chips
1 cup coconut flakes
1 cup finely crushed walnuts
1/2 cup nut or seed butter, like Santa Cruz Organic Peanut Butter
1/3 cup raw honey
1/3 cup virgin coconut oil
2 tablespoons cinnamon (I just love cinnamon, so I put in a lot!)
Combine chocolate chips, oil, honey, nut butter in pan, heat slowly...no more than medium on stove, stirring continually until all ingredients are fully melted together and smooth. Remove from heat and add in coconut flakes, crushed walnuts and cinnamon. Stir until completely covered in chocolate. Spoon out individual cookies onto cookie pan covered in wax paper. Place in refrigerator to cool before eating.

I was wondering though if I could make them with this health bar I recently discovered,this gluten-free energy bar is made by Nouri, a company which gives one meal for one child for every product they sell. If there is anything else I love more than chocolate cookies, it has to be helping those who are in need.
