I bet I can come up with 10 reasons that it is awesome. Here goes...
1.You don't add any refined sugar.
2. It tastes delicious.
3. You don't need pectin! Wahoo!
4. It uses only 4 super healthy ingredients.
5. It is loaded with Vitamin C.
6. It is loaded with fiber to keep you fuller longer.
7. It is also loaded with Omega 3's to help your brain, hair, skin, nails, and so much more!
8. It's full of antioxidants to fight off all those icky free radicals in our bodies.
9. My entire family loves it!
10. It is even raw! No cooking required!
Now, how about that, huh? It could be the most perfect jam there is!

Strawberry-Rhubarb Refrigerator Jam

1 + 1/3 cup strawberries (I used fresh, but you can use frozen too)
2/3 cup rhubarb (again, you can use fresh or frozen)
2 T raw honey
2 T chia seeds (I used Salba Chia, which is my favorite kind)

Process all ingredients in a blender, transfer to jars and
refrigerate overnight. The chia seeds will
gel, thickening the fruit puree.
This is delicious served on toast, PB and J's, and even eaten from a spoon. (But, I would never do that!)
For those of you who have never made jam yourself, this is the perfect recipe to try. I can't even imagine how you could screw it up. It is that easy.

ReplyDeleteIf you aren't going to eat it all in a couple days, just stick it in the freezer. Take it out whenever you want some. :-)
DeleteThis is great! I used to have access to lots of backyard rhubarb, now only at the store. It would be worth it to pay a bundle for rhubarb to try this!
