The word of the day today is SALAD. On this Whole30 challenge, salads have become my best friend. I was always just "eh" about them before I started on this challenge, but now that I have been experimenting with them every day, they have become a staple in my diet that I look forward to!
I have been making salads for lunch since about Day 2 or 3, and they aren't just your ordinary salads. I use this gigantic bowl, fill it with organic spinach, a protein like shrimp, chicken, or salmon and then add raisins, walnuts, or apples, and a homemade dressing I throw together and some spices. (Homemade dressing = equal parts apple cider vinegar and extra virgin olive oil)
Not only is this salad absolutely delicious, but it gets me some great carbs, lots of nutrients, protein and healthy fat. I love it, and so do both of my toddlers. And best of all, I am not getting sick of it! We'll see about that on day 30...
Here's my challenge to you - make a massive bowl of salad like mine and eat 4 or 5 bowls of it for your lunch or dinner. I bet you will feel pretty darn good!

I do the same thing! It may not seem like it will be a huge bowl when you start, but by the time you add in all those goodies, it's huge! and I like to use different vinegars and oils, etc. And I have the whole thing. I still want a little dessert later, so I'll usually have a few dates or some dry roasted peanuts, or something... but I get the protein, carb, and fruits & veggies, nuts/seeds, you name it!!!
