Whole30 Challenge - Day 26 and Chicken Avocado Salad Recipe

Almost there...almost there...almost there!

Is it bad that I have thought about, but not acted on, planning a little celebratory treat (which probably would include chocolate, grains, and/or wine) for when I am done with this? I feel like I have been waiting forever to have my healthy chewy peanut butter and chocolate bars! Those would be yummy...or what about a nice glass of red wine? Chocolate truffle or two?

Okay, I will stop.

Yesterday I wanted to change up the salads we have been having daily for almost the entire month. So, I made this amazingly delicious Chicken Avocado Salad, which we then dipped carrots, zucchini, and cucumber in.

So good!! My kids won't stop asking for more, so that is always a good sign. Plus, it has no mayo or other icky ingredients. All super clean and super tasty!

Here's the recipe. You've gotta try it!

Chicken Avocado Salad

1 Chicken breast, shredded
1 Avocado
1/2 onion, chopped
1 lime's juice
salt and pepper, fresh cilantro or other spices to taste

Just mix this all together and you've got a super easy, delish meal! Serve with lots of veggies!

  3. I just made this and added some chopped up shredded carrots to the mix, then put on a bed of lettuce. It is SO good!
