My Favorite Super Healthy Chocolately Dessert

I have been wanting to share this recipe with all of you for awhile. I make a batch every single week, because I love these chewy yummy peanut butter chocolate bars so much!

Plus, the recipe is very versatile, so you can change it up as much as you like and still have a fantastic treat!

Gooey Peanut Butter Chocolate Bars

1 cup organic peanut butter
2/3 cup raw honey
1/2 cup organic virgin coconut oil
2 cups quick cooking oats
2 cup TOTAL of any combination of: sesame seeds, coconut flakes, sunflower seeds, dried fruit, mini chocolate chips (I personally use a combo of dark chocolate chips, chia seeds, hemp seeds, and shredded coconut)

In a medium sized saucepan, melt together peanut butter, honey and coconut oil.

Remove from heat and add 2 cups of oats.  Choose your favorite combination of coconut flakes, sesame seeds, sunflower seeds, dried fruit and mini chocolate chips, to equal a total of two cups.  Pour in and stir well.

Spread mixture into a 8x8 or 9 x 12 inch pan.

Chill for 2 hours, then cut into bars.

Wrap in plastic wrap for a quick grab and go snack! Trust me, you will love this!

  4. Oh wow, that looks so good! And just a small piece would be okay with gestational diabetes, right?

  6. This sounds great, chocolate and peanut butter has to be the best combination ever! I make a loaf of banana nut bread every week that I eat for lunch everyday. It's also very versatile. I add different flours, chocolate chips, coconut flakes, nuts, use applesauce instead of oil and greek yogurt instead of sugar. I cut a slice, add some peanut butter, sliced bananas and a drizzle of honey.

  7. I love making bars I don't need to use the oven - I'm so excited to try these - they sound amazing! I keep a variety of butters, seeds, nuts, etc. to keep experimenting with recipes like this, I don't find many. Yippeee!
