My Adventure Trying To Make Homemade Larabars

So, the other day, I found this great recipe for making LARABARS at home, instead of spending more money for them at the store. I love LARABAR, so I was super excited to try my hand at making them myself.

I ran to my Co-op, grabbed the three organic ingredients I needed, and got to work in the kitchen.

Here are my ingredients and instructions:

Cherry Larabar
* Put 1 c almonds in a food processor – chop them up good.
* Then dump them in your blender.
* Next add 1 c unsweetened moist but dried Bing cherries and 1 c figs into the blender and chop that up until they form a ball.
* Then dump that into the kitchen aid and mixed it all together.
Spread it out on some saran wrap and smoosh or roll it out to about 1/2 “ thick and cut them into bars!  The batch above made 6-7 bars the same size as the ones at the store (or if you make them mini-size, like I do for my son's lunches, they make way more).

So, that sounds easy enough, right?

Well, I did the first step. There are my crushed up raw almonds.
Then, I put the cherries and dates into my food processor.
Next, I mixed these both together in my blender and finished them off again in the food processor.

By the way, this is my updated version. As you can see in my comment section, my first adventure was using figs instead of dates. Whoops!

Hi! It looks like your nuts arent fine enough- let them go much longer, til almost chunky nut butter. Cashews are "softer" and will be easier if you want to swap. You say you used figs? If you did that is the issue- the dates have a squishy sticky textures that "glues" everything together. Medjool dates are the best variety. Keep trying! They are easy and super awesome!
