This summery, yummery recipe is healthy, easy, and quick to make! Perfect for lots of summer fun! I am not a fan of goat cheese, so I leave it out. But I know many people love it, so I included below.
Serves 4
Preparation Time: 10 minutes
Ingredients:
· 8 slices whole wheat bread
· 4 Tbsp. hummus
· 4 Tbsp. guacamole
· 4 romaine lettuce leaves
· 4 Tbsp. goat cheese
· 2 mini cucumbers, sliced
· 1 medium tomato, sliced
Directions:
1. Toast bread. Spread 1 Tbsp. hummus and guacamole on 1 slice of bread, add 1 romaine lettuce leaf, spread 1 Tbsp. goat cheese, then add cucumber and tomato slices.
2. Top with second slice of bread.

I love hummus but usually I eat it with crackers and vegetables. This sandwich sounds wonderful and very healthy. I am sure the guacamole gives this a delicious taste too. I would love to try this soon!

Sounds good. We like all the ingredients in this sandwich. Our oldest daughter has been including more meatless meals in her weekly meal plans for several years now. She was the first one to start using hummus and goat cheese. I'll be passing this along to her.
