Also, feel free to experiment with this soup. You can add or substitute squash or other veggies for the ones that I suggest. Change up the spices if you want. Be creative!
Sweet and Spicy Sweet Potato/Carrot Soup
You will need:
- 2 Large sweet potatoes or 3 smaller ones, peeled and cubed
- 2 Large carrots
- 14 oz of coconut milk
- 1 cup chicken stock or water
- 1 onion, chopped
- 2 cloves garlic, minced
- sprinkling of black pepper, red pepper flakes, and cayenne pepper
- handful of parsley and chives
It looks white when you first put it all in the crock pot. But, after several hours of cooking, use an immersion blender or dump the crock pot into your blender and blend it all up really nicely. Then, you get this beautiful orange color, and the taste is divine!
I couldn't even wait to take a picture to dig in (as you can see, my bowl is already half empty). This was a hit with our whole family, and they were begging for more!
