Zucchini "Bread"sticks Recipe

Who wants to cook dinner tonight using only 3 ingredients? How about an easy supper that only has 3 steps to it?

Yes, I am serious. A delicious, healthy, from-scratch dinner with only 3 ingredients and 3 easy steps. 
Plus, it is paleo, Whole30, gluten-free approved! 

Oh, and did I mention my whole family loves these and gobbles them up in 5 minutes flat?

Zucchini Breadsticks

You will need:
  • 2 medium Zucchini
  • 2 eggs
  • 2 tbsp Italian seasoning (or change it up with a mix of onion powder, oregano, basil, red pepper flakes, salt, pepper, etc.)
First step: Chop up zucchini and stick them in your food processor until they are about the consistency of rice.
Second step: Add all ingredients to a bowl and stir well.
Step Three:  Spread the mixture on parchment paper on a baking sheet and throw it in the oven on 425 degrees for 25 minutes. In the meantime, spread out another sheet of parchment paper on a different baking sheet. After 25 minutes, flip the cookie sheet of breadsticks onto the empty sheet and cook for a few minutes more until they brown slightly.
Slice these up and serve them with homemade marinara or your favorite organic store bought version.

Yum! Easy! Healthy! And who doesn't love bread sticks? (especially when they aren't really made of carb-crazy bread)

  2. I love Zucchini and try to eat it often. I have never made breadsticks before, but this is different and looks delicious, I would love to try it!
