No Cook Summer Sardine and Avocado Snacker Recipe

Are you scared off by the words "sardine" and "avocado" in the same title? 

Well hold on a minute. Give me some time to talk you through this new recipe idea.

Sardine and Avocado Snacker
You will need:
Wasa crackers or whichever other crackers you prefer
1-2 Avocados
4-5 hard boiled eggs
1-2 cans wild sardines*
pepper
tabasco (I used salsa)

Mash up the avocado. Season it a little with your favorite seasoning and spread on the cracker. Slice the hard-boiled egg and stack that on top. Then add a few sardines, more seasoning, and the sauce of your choice drizzled on top.This feeds about 4 people.
 
That doesn't look so bad, does it? Think about that creamy avocado topped with the smoothness of the egg, the gentle flavor of the sardine and the spice of the pepper and tabasco (or salsa). Starting to sound good, isn't it? Trust me, I was a little hesitant to make this, but after my family of four tried it, we absolutely loved it, and I am going to be making this a LOT this summer.

If that isn't enough to convince you to give it a try, let's talk about the nutrition of this recipe. 

It is a powerhouse of good-for-you ingredients! 

Avocados - need I say more? Healthy fats, tons of Vitamin C and Vitamin K... 
Eggs - complete protein, healthy fats, Vitamin A, Vitamin D and more...
Sardines - more protein, calcium, phosphorus, iron, healthy Omegas and Coenzyme Q10

Need I say more? Now, will you try?

This is a great snacker or light meal for summer. It involves no cooking (besides hard-boiling the eggs, if you don't already have some hard-boiled eggs cooked up) and is a refreshing treat!

*I like to use Wild Planet’s premium sardines. They are sustainably caught along the central California coastline from the same fishery which made Monterey’s Cannery Row famous. You can find them at Whole Foods or other retailers near you.
