Crockpot Chicken Wraps Recipe

Mexican food...yum! I love Mexican - all the spices, flavors and the variety of textures! In my healthier version of chicken tacos, I am using romaine leaves or "boats" as I call them to replace the taco shell. To make this recipe super easy, we are using the crockpot. All you have to do is throw a couple ingredients in the crockpot and wash your romaine lettuce. Now, this is what being an awesome home cook is all about!

Crockpot Chicken Wraps

1 1/2 pounds of organic chicken breasts
1 can of black beans - if using canned, go for one with BPA free lining like Eden Organics (or skip this if you are Paleo or Whole30)
1 jar of salsa
1 avocado
1/4 cup of chopped cilantro
lettuce wraps - Romaine leaves or whatever else you'd like to use
any other toppings you'd like

Just throw the chicken, black beans, and salsa in the crockpot on low for 7 hours or high for 3 hours. Make sure chicken is covered.

After it is all cooked and the delicious smell is wafting through your house, then shred the chicken and add the chopped cilantro. Spoon onto lettuce wraps or "boats" and add chopped avocado. Delicious!!!
