Bison Meatloaf Recipe

If you didn't read my post from yesterday - 3 Reasons to Eat Bison, it is a must read! You wouldn't believe how healthy and tasty it is! If you aren't convinced after reading that article, then check out my new favorite meatloaf recipe that you can use ground bison in (or beef or turkey).

This recipe was a huge hit in our family! My husband told me it was the best meatloaf I have ever made. I just pretended that it was really hard to make and enjoyed the verbal praise. Secretly, I knew that it was only 4 ingredients! Ha!

Try it for yourself. I bet it will become a staple meal in your home.

Mexican Bison Meatloaf

You will need:
1 lb ground bison (or beef or turkey)
1 egg
1 cup of old fashioned rolled oats
1 1/2 cups salsa

That's it! Yay!
 
Preheat your oven to 350 degrees. 

In a large bowl, combine 1 cup of the salsa and the egg. Then add in the bison and rolled oats. Mix it by hand and add in more oats (or black beans) if you wish until it reaches your desired consistency. Divide the mix between two loaf pans, allowing 1/2" of space along the side of the pan. Sprinkle it with a little pepper and add the rest of the salsa to the top. 

Bake this for 50 minutes or until the center registers 165 degrees and the meat is no longer pink/red. 
This makes enough to feed a hungry family of 4. 

Enjoy! So delicious! Also, this is perfect for serving with sweet potato french fries. Yum!

  1. Wow! This is the first recipe I have seen using Bison.I love the taste of Bison,and this recipe is so simple to make I will be trying it soon.Where I buy Bison meat is about a hours drive from where I live so it might be a while before I try it but I will.

    1. Oh, it is worth the drive! Just go there once in a great while and stock up! Bison is my favorite red meat!!!
