How To Cook and Use Spaghetti Squash

I have always been intrigued by spaghetti squash. I have always read that it is a good substitute for pasta, but having never tried it myself, I never recommended it before. Now, I can!! I tried it out myself, and it made one of the most delicious meals I have ever had! Since it is a fall veggie, this is the perfect time to try one out.

If you are unfamiliar with what to do once you have a spaghetti squash, let me walk you through what I did. 

1. First, you cut it in half and cut off both ends of the squash. Then, you scoop out all the seeds and "guts" as I call them. You can see the squash on the left has the "guts" out already, while the one on the right is still full of guts. (Oh, and make sure to save the seeds to roast in the oven. They are heavenly with a little sea salt!)

2. Then turn the oven on to about 375, put both squash open end down, and cover them both with foil.
3. After they are both very soft, (you should be able to stick a fork into the middle very easily) take them out, take the foil off, and very carefully start scooping out the "spaghetti strands." I like to use a fork to get them to come out really stringy. You can see what the squash will look (below on the right) like after you get all the strings out.


4. Meanwhile make your own pasta sauce or use your favorite jar variety. Then, as you scoop the strands out, just throw them into the pasta sauce and stir, or put them in a big bowl for scooping on plates and topping with your sauce. Voila! You are done! It is delicious and quite filling! Everyone will love it, and you will feel great knowing you made yourself and your family a healthy, delish dinner!

  1. I just bought a spaghetti squash but I was not sure how to make it, so this helps very much. I did try one other time and I microwaved it, but I like this way of cooking it better. I do like it with the sauce, it does need the flavor.

  2. We have cooked and eaten spaghetti squash for years. I cook mine in the microwave. Just put it on a microwave plate cut side down, add a little water, and cover with plastic wrap. I usually cook it on high for 6 minutes, check it, and cook as much more as needed.
    We usually serve it just like regular spaghetti with sauce and cheese. It has a mild flavor but is still good with just butter and salt and pepper on it. You could use it in casserole dishes which call for summer squash or for pasta. Just remember the moisture content is high and adjust your recipe accordingly.
