Sweet Potato Quesadillas Recipe

Let's get this week started on a fun and healthy note with a new recipe! This is one of my favorites, and it is full of super foods!

Sweet Potato and Spinach Quesadillas

You will need:
2 medium sweet potatoes (about a pound)
dash or two of salt
1/4 tsp black pepper
8 flour tortillas
5 cups baby spinach
1/2 cup shredded cheese (or less)
2-3 tsp of coconut oil or nonstick cooking spray

1. Start by cooking your sweet potatoes in the oven. I poke holes all over them with a fork and then cook them until they are nice and soft.
2. Split the cooked potatoes open with a knife; remove their yummy goodness and use a fork to smash the potato with salt and pepper.
3. Divide the potato filling among 4 tortillas. Top each with 1 heaping cup spinach, a smattering of cheese and another tortilla.
4. Heat a large nonstick skillet over medium-high heat. Spray or add oil. Then, cook the quesadillas one at a time until cheese is melted. (about 3 minutes per side)
5. Cut and serve after all quesadillas are made.

Enjoy! These are very filling and oh-so-good for you!

  2. My daughter has been telling me that she wants to make quesadillas. I showed her this recipe because we did not think of using sweet potatoes. We also love spinach. This is a nice healthy meal.

  6. How do you turn it over without everything falling out or the bottom tortilla folding up?

  7. I have never had a problem with stuff falling out or the tortilla folding up. If you put the spinach on top of the sweet potato, it kind of sticks to it.

  9. I could easily do this, but my kids would not even give it a second look. I make a pizza with homemade sweet potato chips, caramelized onions, garlic, rosemary, goat cheese and kale. It tastes amazing and at the same time its healthy!
