I love making healthy, nourishing meals for my family. But, I also don't have tons of time and don't like complicated recipes, so I wanted to share one of my easy healthy recipes with you! I am hoping some of you might want to share with me too! If you have a recipe to share, just comment with the recipe or a link to where we can all find your recipe. Meatless Mexican Lunch
Prep time: 33 minutes
You will need:
1/2 small organic onion, chopped
1 can (15 1/2 oz) organic crushed tomatoes
3/4 cup frozen corn kernels
1 can (3 1/2 oz) organic chopped green chile peppers
1 can (14-19 oz) organic black beans, rinsed and drained
1/2 cup organic brown rice
1 tsp ground cumin
1/4 cup organic Cheddar or Monterey Jack cheese
Heat a medium pot coated with cooking spray or extra virgin olive oil over medium-high heat. Add the onion and cook, stirring, for 1 minute. Stir in the tomatoes, corn and chile peppers and bring to a boil. Add the beans, rice and cumin. Remove from the heat, cover and let stand for 10 minutes. Serve sprinkled with cheese. Makes 4 servings.

This sounds delicious and easy. I bet this would go great with some whole wheat tortillas :)
ReplyDeleteLooks tasty! I agree with kmogilevski - would definitely go well in a tortilla. My husband and I make a similar recipe as a burrito filling.
