Zucchinis Galore!!

I don't know if I have mentioned this yet, but this is our first year at having our own organic garden, and we are loving it!! Our veggies are growing great! (except for our broccoli, which got eaten by something)

But, I have a little bitty problem. I have so many zucchinis, and they are soooo big!! I have been making soup, zucchini bread, and zucchini cake like it is going out of style. Not to mention I have been freezing it and sharing it like crazy too! But, I still have massive zucchinis stacked up on my counter that are starting to drive me batty.

My question to all of you chefs out there is: What else can I do with my zucchinis?? Please help me!! I am sure everyone else would love to hear of new zucchini recipes too. Thank you so much!

  1. Well something that I love is deep fried zucchinis and mushrooms. And dipping them in ranch. Its kind of like eating onion rings or french fries. Nothing is better then home made fried food. Just an idea.

  2. I have seen recipes for zucchini pizza crust! And I bet you could make zucchini chips, like kale chips, in a low oven or dehydrator!

  5. Ha! This is hilarious! Because this is exactly our problem with our garden! Too many zucchinis! Our friends won't take more than one, at most! Haven't found a good solution yet. Love the idea of making zucchini chips. You could also look for a zucchini bread recipe (like banana bread). Yum!
