So, I have been eating a lot of nuts - mostly cashews, but today I couldn't find my normal organic cashews at Trader Joe's. So, I went for a bag of the Dry Roasted and Salted Mixed Nuts. They are working well for me too. I am not so sure that I am supposed to be eating that many nuts. But I am trying to take this journey one step at a time, and today I am eating them. Period.
On a more positive note, the dinner I made last night was as easy as pie and it was off the charts delicious!!! Want the recipe? Okay, I will share.
Italian Crockpot Chicken Soup
- 3 large or 4 small chicken breasts (mine were frozen)
- 1 cup chicken broth
- 14 oz. can of full fat coconut milk
- 14 oz. can of diced tomatoes with juices or you could also use fresh diced tomatoes
- one or two cloves of chopped garlic
- 2 tablespoons of italian seasoning
- 1 tablespoon dried basil
- other veggies you may choose. Next time, I am going to add in some mushrooms and spinach.
Cook over medium for 7 hours or so. Then just use two forks and shred the chicken. That is it! No fuss!
Ooooohhhh! This was so yummy! It was comfort food at its healthiest! Creamy, flavorful, the chicken was literally melting in my mouth, and I even had a little bit left over for lunch today with my salad. I am going to be making this recipe every week!

I understand having a 'nut' day; I've had some of those my self, but remember that you should only have about a handful of nuts in a day. They are high in saturated fats. Good but still saturated. Keep going! You are doing great!

DeleteI am trying to use my crock pot more often. This will be a nice addition to the recipe box. Soup is the perfect meal when the weather turns cool.

ReplyDeleteHmmmm...I am really not sure. The coconut milk gives it so much creaminess, but I would definitely give it a try if coconut milk is not an option.

ReplyDeleteYou can sure use the light, but it doesn't taste as creamy. Full fat coconut milk is a healthy choice, because it is full of good fats that your body needs. They also help keep you fuller longer!

DeleteI would just put in on high for 4 hours. You can play with it if you want it cooked longer or shorter.
It has been in my crock pot since 7 this morning on low. :) my husband gets off work at 5 so I am planning on taking it out a little before to shred then serve. (That is ten hours if I wait until 5) my crock pot suggests you cook it on low or high as well, but does have the warm choice. Either way it mmakes for such a yummy smell throughout the house. It depends on your crock pot too. Just play with it like Cara says. I know my crock pot heats really high so you just have to know what you're working with. :)

DeleteBe careful with that coconut milk! There are about 3.6 g of fat in 1 tbsp. and 3.2 of those are saturated fat...which is NOT the healthy fat!
ReplyDeleteCoconut milk is actually full of healthy fats. These saturated fats are much better for you than previously thought in the past. Enjoy the creamy goodness!

I'm also under the weather due to being caught in the rain two days in a row. I cannot wait to share this recipe and I personally will be making it time and time again!! ReplyDeleteI would think the cream would curdle, but I am not sure. You can certainly try the regular milk, but the coconut milk really adds a lot of creaminess and a little sweetness.

ReplyDeleteYou can google recipes for making your own Italian seasoning blend. I've started doing this for all of my seasoning blends such as taco seasoning, Italian , etc. then I know exactly what's in them and I know I'm not getting all the added chemicals.

ReplyDeleteI actually end up cooking mine in my new clay crockpot for about 2 1/2 hours. Yes, they do lose some nutritional value, but almost every way of cooking and storage takes nutrients out.

I LOVE this recipe. I have made it 6 or 7 times (including last night) since I found it...hands down one of my favorites. I just recently switched to a gluten-free diet and was so excited that I can still eat this!!
