Whole30 Challenge - Day 6

This has been a day of some challenges and a lot of realizations...

First off, a little confession, the last two nights I have been eating cashews while I watch TV. That may not sound like a big deal to you, but part of the Whole30 is not snacking, especially when it is just for grazing or satisfying a craving. Since I am still learning about what my body really is telling me - hunger or craving - I probably shouldn't be eating those cashews at what used to be my big "snack time" of the day. So, that is my new challenge for this next week. Absolutely no snacking after dinner. Period.

On another note - I really love how the Whole30 challenge is allowing me the opportunity to try all kinds of new recipes and ingredients that I normally wouldn't try. It is challenging me in many ways:
- my creativity in trying to come up with new, Whole30-approved recipes
- how to shop, prepare and cook all these new meals three times a day every day with three little kiddies to take care of
-my thoughts on what my body really needs. Yes, I realized I can survive without chocolate and snacking at the end of every day.

My last little note - I got to go grocery shopping by myself today - kid free. But, it was my hardest shopping trip ever. Walking through all the aisles past all of my temptations without anyone to keep me focused was a true test of strength and determination. :-)

Now for a little recipe sharing...
This one is another easy, peasy one that you may all have already made. But, I will share it anyway.

Beef Vegetable Soup

1 onion, chopped
8 small mushroom, chopped
1 lb ground beef
4 stalks of celery, chopped
32 oz vegetable broth or more
1 cup of water
2 cloves garlic, chopped
any other veggies you like
Salt and pepper and any other seasonings you like

Cook the onion, mushrooms, celery and ground beef in a pot on medium high until meat is browned. Pour in vegetable broth and all other ingredients. Let simmer for 5-10 minutes. Enjoy!
